Cashew cream
1 cup raw cashews, drained (soaked 4-6 hours or boiled for 10 mins to soften)
2 cups water
1 tbsp lemon juice
3/4-1 tsp salt
dash of pepper
2 cloves garlic or 1/2 tsp garlic powder
Add all ingredients to a blender, and blend thoroughly until you have a very smooth cream. Add more water if needed to get it to the consistency you’d like.
Serve this dairy-free, luxurious cream sauce over pasta, vegetables, drizzled over burritos… the sky is the limit and the cows thank you!
